  • 300 grams chicken thigh or breast, cut into small pieces
  • 200 grams rice vermicelli noodles

  • 1/2 red bell pepper, thinly sliced

  • 3 tbsp vegetable oil
  • 1 tsp soy sauce

  • 3 tbsp all-purpose soy sauce or light soy sauce
  • 1 tsp dark soy sauce (optional)
  • 2 cups water
  • 1 1/2 tbsp sugar
  • 1 cube chicken bouillon
  • Salt to taste

Instructions

  1. Step 1: Prepare and gather all ingredients. Season chicken pieces with soy sauce and black pepper. Mix well and set aside.
  2. Step 2: Heat 2-3 tablespoons of vegetable oil in a large pan or wok over medium-high heat. Stir fry the chicken pieces for 2-3 minutes.
  3. Step 3: Push chicken to one side of the pan. Add garlic and stir for a few seconds, then add onions, carrot, bell pepper, mangetout, and cabbage. Stir fry until just cooked through. (Tips: Start with harder veggies and follow up with softer ones.)
  4. Step 4: Remove chicken and vegetables from the pan and set aside.
  5. Step 5: In the same pan, pour in water and season with regular soy sauce, dark soy sauce, sugar, and chicken bouillon. Stir well and bring to a simmer.
  6. Step 6: Add rice vermicelli noodles and stir occasionally until noodles absorb all liquid. (Tips: Do not overcook noodles.)
  7. Step 7: Return cooked chicken and vegetables to the pan. Mix everything evenly and adjust seasoning with salt or pepper as needed.
  8. Step 8: Finish by topping with spring onions, remove from heat, and transfer to serving plate.

Additional Information

Notes: Feel free to adapt the vegetables and protein to your liking. Traditional versions often use cabbage and carrots, but any stir-fry vegetables will work. Adjust seasoning to taste.
