Instructions

  1. Step 1: Heat a heavy-based skillet over high heat until smoking. Place onion and ginger in pan cut side down. Cook for a few minutes until it's charred, then turn. Remove and set aside.

  1. Step 1: Toast spices lightly in a dry skillet over medium-high heat for 3 minutes.

Beef Bones and Broth

1kg / 2lb Marrow bones cut to reveal marrow
3.5 litres / 3.75 quarts Water

Instructions

  1. Step 1: Rinse the bones & brisket then cover with water in a large stock pot. Boil for 5 minutes, then drain.
  2. Step 2: Rinse each bone and brisket under tap water.
  3. Step 3: Wipe pot clean, bring water to boil. Add bones, brisket, onion, ginger, and spices. Cover with lid, simmer 3 hours.
  4. Step 4: Remove brisket, cool then refrigerate for later.
  5. Step 5: Continue to simmer remaining soup uncovered for 40 minutes.
  6. Step 6: Strain broth into another pot, discard bones and spices.
  7. Step 7: Add fish sauce, adjust salt and sugar if needed.
