1 tablespoon olive oil avocado oil
2, peeled and sliced into 1/4-inch thick pieces carrots peeled and sliced parsnips
2 stalks, sliced into 1/4-inch thick pieces celery sliced fennel
1, diced onion diced shallots
3 cloves, minced garlic minced garlic powder
1 pound boneless, skinless chicken thighs chicken breast
6 cups chicken stock vegetable broth
1 bay leaf
2 cups egg noodles gluten-free noodles
2 tablespoons lemon juice freshly squeezed lime juice
to taste salt
to taste freshly ground black pepper

Instructions

  1. Step 1: Heat olive oil in a large pot over medium-high heat. Add carrots, celery, and onion. Cook until tender, about 3-4 minutes, stirring occasionally. (Tips: Don't let the vegetables brown; they should just soften.)
  2. Step 2: Add garlic and cook until fragrant, about 1 minute. (Tips: Be careful not to burn the garlic.)
  3. Step 3: Stir in chicken, chicken stock, and bay leaf. Bring to a boil; reduce heat and simmer, covered, until chicken is cooked through, about 25-30 minutes. (Tips: Skim any foam that rises to the top while simmering.)
  4. Step 4: Remove chicken from the pot and shred with two forks. (Tips: Shredding is easier when the chicken is warm.)
  5. Step 5: Return the shredded chicken to the pot. Stir in egg noodles and cook until the noodles are tender, about 8-10 minutes. (Tips: Adjust timing based on noodle brand.)
  6. Step 6: Stir in lemon juice and season with salt and pepper to taste. (Tips: Adjust acidity with more or less lemon juice as desired.)
  7. Step 7: Serve immediately; garnish with fresh herbs if desired. (Tips: Parsley or dill would work well as a garnish.)
