1 | egg yolk | room temperature

1 teaspoon | lemon juice | lime juice
¾ cup | vegetable or grapeseed oil | neutral oil | olive oil (mixed with another oil in 1:2 or 1:3 ratio) |

Instructions
- Step 1: Use a fork to smash the black garlic cloves into a paste—you should have about 1 tablespoon.
- Step 2: In a small-medium bowl, whisk together the egg yolk, Dijon mustard, lemon juice, and kosher salt.
- Step 3: Pour the oil into a measuring cup with a spout. Very slowly, begin to drip the oil into the bowl with the egg mixture, whisking constantly.
- Step 4: Once about ¼ cup of the oil is incorporated, you can increase the speed slightly. Continue whisking constantly until all the oil is incorporated and the aioli is thick.
- Step 5: If the aioli becomes too thick, add water a teaspoon at a time to adjust the consistency.
- Step 6: Whisk in the black garlic paste and let the aioli sit for at least 10 minutes to allow the flavors to meld.
