Instructions
- Step 1: Preheat the oven to 325°F. Lightly spray an 8x8 baking dish with cooking spray and line it with parchment paper, then spray the parchment.
- Step 2: In a medium bowl, combine the sugar, flour, cocoa powder, powdered sugar, chocolate chips, and salt.
- Step 3: In a large bowl, whisk together the eggs, oil, water, and vanilla.
- Step 4: Sprinkle the dry mixture over the wet one and fold gently until just combined. The batter will be thick.
- Step 5: Pour the batter into the prepared pan. Use a rubber spatula to spread it evenly and smooth the top.
- Step 6: Bake for 40 to 45 minutes, or until a toothpick inserted in the center comes out with only a few crumbs attached. It's better to pull them out early rather than overbake.
- Step 7: Allow the brownies to cool completely before slicing and serving. Store in an airtight container at room temperature for up to 3 days. They also freeze well for longer storage.

Notes: If you'd like to taste less sugar, you can reduce the granulated sugar to 1 cup. Using olive oil will impart a distinct flavor; for a more neutral taste, opt for canola oil.
