Instructions
- Step 1: Cut roast into 6 portions, remove large pieces of fat. Heat 1 Tbsp oil in a skillet and sear half of the beef.
- Step 2: Season beef with salt and pepper. Brown all sides in the skillet, transfer to a slow cooker. Repeat with remaining oil and beef.
- Step 3: In a food processor, pulse chipotle chilies, garlic, and 1/4 cup beef broth until smooth. Whisk with remaining broth, cumin, oregano, and cloves.
- Step 4: Pour mixture over beef in the slow cooker and add bay leaves. Cover and cook on low for 8 - 9 hours.
- Step 5: Remove beef and shred. Stir lime juice into broth, then return beef to slow cooker and cook on low or warm for 20 - 30 minutes longer.
Additional Information
Notes: For a milder dish, replace chipotle chilies with 4 tsp mild chili powder. Cooking on low yields the best results for tenderness.
