Ingredients

Quantity Name Preparation Notes Substitutions
2 tablespoons vegetable oil canola oil
1 pound boneless skinless chicken thighs cut into 1 ½-inch cubes chicken breasts
½ cup white wine vinegar apple cider vinegar
6 large garlic cloves peeled and grated garlic powder
1 ½ tablespoons fresh ginger root peeled and grated ground ginger
1 tablespoon ground cumin
2 ½ teaspoons kashmiri chili powder paprika
½ teaspoon ground turmeric
1 cinnamon stick broken into smaller pieces
1 tablespoon brown sugar honey
½ teaspoon ground mustard mustard seeds
1 teaspoon ground coriander
1 ½ teaspoons sea salt
1 teaspoon freshly ground black pepper

Instructions

  1. Step 1: In a medium bowl, combine vinegar, garlic, ginger, cumin, chili powder, turmeric, cinnamon, sugar, mustard, coriander, salt, and pepper. Mix well. (Tips: Taste the marinade and adjust seasoning if needed.)
  2. Step 2: Add chicken pieces to the bowl and coat well with the marinade. Cover and refrigerate for at least 1 hour, up to overnight. (Tips: Marinating longer will enhance the flavors.)
  3. Step 3: In a large saucepan, heat the vegetable oil over medium heat. Add the marinated chicken and cook for 8–10 minutes until browned on all sides. (Tips: Do not overcrowd the pan; cook in batches if necessary.)
  4. Step 4: Reduce heat to low, cover the pan, and let the chicken simmer in its juices for 30 minutes, stirring occasionally. Ensure the chicken is fully cooked and tender. (Tips: If the mixture becomes too dry, add a splash of water or stock.)
